Ingredients for Baigan ka bhartha/Pedda Vankaya kalchina pachadi
1 large brinjal (250 gms)
1 medium size onion chopped
3 to 4 green chillies finely chopped
2 table spoons chopped coriander leaves
few curry leaves
2 red chillies
1 tea spoon each rai, jeera, urad dal and chana dal
a small lemon size tamarind (soak in warm water for 15 mins and make thick pulp)
Salt to taste
a pinch of hing
1 table spoon oil
Apply oil on the brinjal
Wash brinjal and wipe with a kitchen towel. Apply oil on the brinjal.
start heating the brinjal directly on the gas
Now in a low flame start heating the brinjal directly on the gas. Turn the brinjal after every few sec. and roast properly.
brinjal is completely roasted
When the brinjal is completely roasted. Switch off the flame. Allow it to cool and slowly remove th skin of the brinjal.
take the brinjal into a bowl and mash well
Now take the brinjal into a bowl and mash well. Add chopped onions, green chillies, coriander leaves, salt and tamarind pulp. Mix well and keep it aside.
thadka for the chutney
Heat oil in a pan for thadka. Add rai to it. When it starts spluttering add the dals, red chillies, hing and curry leaves. Fry and add the thadka to the chutney.
