Ugadi marks the begining of the Telugu New Year. It also brings happiness with the onset of Vasath Ruthu (Spring). Ugadi Pachadi is a special preparation prepared in every Andhra home on this day. This chutney consists of 6 tastes (Shadruchulu), Sweet, sour, bitter, salty, hot and pungent.
Ingredients:
Neem flowers Petals : 2 tea spoons
Grated Raw mango : 2 Table spoons
Tamarind : A small lomon size ball.
Green chillies : ½ tea spoon (finely chopped)
Salt : quarter tea spoon
Jaggery (gud) : ½ Cup (powdered)
Optional:
Banana (Ripe) : 1 No.(chopped to small pieces)
Grapes : 10 to 15 nos.
Buni hui chana dal : 2 table spoons
(putnal pappu)
Method:
take the flowers
To seperate the petals just take the flowers and mash them in between your palms.

Seive in a large holed seiver and collect only the petals of the neem flowers.

Soak tamarind in water for 15 to 20 min. and make pulp. It should be thin and watery.(approximately 3 cups). Now add neem flower petals, grated mango, green chillies, salt and jaggery. Mix well until the jaggery dissolves. Now add chopped banana, grapes and roasted chana dal to it. Katti meethi Ugadi Pachadi, (Chutney) is ready...........
