Kaddu (Gummadi Kaaya)Pumpkin Curry
Heat 2 to 3 table spoons of oil in a frying pan.
Add Rai , Jeera , Red chillies and Curry leaves. Let Rai and jeera splutter and then add mashed garlic cloves and finely chopped onions. Fry until the onions become pink in colour. Add Haldi and Kaddu pieces and stir. Add salt and close the pan with a lid.
Cook in low flame untill the curry is done. Add Methi Jeera powder and stir.
Methi(Fenugreek) and Jeera Powder
Garnish the Kaddu curry with dhaniya (coriander) leaves.
Tips: Serve Hot. Good to have with Rotis, Chapatis and Rice.
