Semphalli-Baigan ki sabzi/Chikkudukaya-Vankaya koora

Ingredients:

  • 150 gms broad beans (wash, de-string and chop to medium size pieces)
  • 150 gms brinjal (chop to medium size pieces)
  • 2 to 3 tomatoes chopped
  • 1 large onion chopped
  • 2 green chillies
  • few curry leaves
  • 1 tea spoon each rai, jeera and urad dal
  • salt to taste
  • 1 tea spoon red chilli powder
  • 1/4 tea spooon haldi
  • 1 tea spoon dhaniya powder
  • 1 tea spoon ginger garlic paste
  • 2 table spoons oil

Method:

Heat oil in a pan.  Add rai, jeera and urad dal.  When rai starts spluttering add chopped onions, green chillies and curry leaves.  Fry until the onions become translucent.  Now add ginger garlic paste and fry for a while.  Add red chilli powder, dhaniya powder and haldi.  MIx well and add chopped tomatoes and fry for 2 mins.  When the tomatoes are cooked add chopped broad beans and brinjal pieces.  Add salt and mix well.   Add a cup of water, close the lid and cook for 10 to 15 mins in a medium flame until the veggies are cooked.

Switch off the flame and take the curry into a serving bowl and garnish with chopped coriander leaves.

Semphalli-Baigan ki sabzi/Chikkudukaya-Vankaya koora is ready..........tastes good rice or rotis.
