Take the grated bottle gourd, finely chopped onions, a table spoon of chopped dhaniya leaves and curry leaves in a bowl.
Add a cup of besan, 1/2 tea spoon red chilli powder 1 tea spoon ginger garlic paste, soda bicarb and salt to taste.
Mix well, add sufficient water and make a thick batter. You can see in the above picture.
Heat oil for deep fry in a pan. Now make lemon size balls and fry them until they turn to golden color.
Remove from the oil, drain the pakoras on an absorbent paper. Keep them aside.
Heat a table spoon of oil in a pan. Add the diced onions, green chillies and curry leaves. Fry until the onions become translucent. Now add ginger garlic paste. Stir fry and add red chilli powder, dhaniya powder, haldi and garam masala powder. Stir well, fry for a while and add the tomato paste. Add salt to taste and sugar (optional).
When the tomato paste is properly cooked and starts leaving oil, add the loki pakoras to it. Mix well, switch off the flame and take it into a serving bowl. Garnish with chopped dhaniya leaves. Tasty Loki Pokore ki Sabzi/ Sorakaya Pakodi Koora is ready to serve.........Enjoy......
