Atukula Vadalu/Pohe ke vade
Ingredients for Atukula Vadalu/Pohe ke vade
1 cup poha (Atukulu/Beaten rice)
100 gms aloo (boiled and mashed)
3 to 4 green chillies
1/2 inch ginger
1 table spoon curd (should be sour)
1 table spoon maida or Rice flour (for binding)
few curry leaves
1 table spoon finely chopped coriander leaves
1 onion finely chopped
a pinch of hing
salt to taste
1 tea spoon jeera
Oil for deep fry
Wash poha, drain and add a tbsp of curd
Method:
Clean, wash and drain poha. Add a table spoon of sour curd to it. Mix it well and leave it aside. Mean while boil potatoes, peal and mash them. Grind green chillies and ginger to fine paste.
Add all the ingredients to the soaked poha
Now Add the mashed potatoes, ginger-chilly paste, chopped onions, coriander and curry leaves, hing, salt to taste, jeera and maida (or rice flour) to the soaked poha and mix well.
Atukula Vadalu/Pohe ke vade
Heat oil for deep fry in a pan. Take a lemon size ball of the mixture on your palm. Pat and make small vadas. Deep fry them in oil until they turn to golden brown. Place them on an absorbent paper, and serve them hot with tomato sauce or any chutney............Tasty
