1 medium size capsicum chopped (Here I have used red bell pepper )
2 green chillis
1/2 tspn red chilli powder
1 tspn dhaniya powder
1/4 tspn haldi
1 tspn finely chopped garlic and ginger (you can use ginger garlic paste)
1 tbsp oil
salt to taste
To cook jeera rice:
1 cup rice
1 tspn jeera
1 bay leaf
1 tbsp butter or ghee
Finely chopped dhaniya leaves for garnish
1 tspn lemon juice (optional)
Wash rice , drain water and keep it aside. Heat butter/ghee in a pressure cooker. Add jeera and bay leaves to it. When jeera starts spluttering add the rice to it. Stir fry and add 2 cups of water. Add salt to taste. Cook for 2 to 3 whistles and keep it aside.
Now heat oil in a pan and add chopped onions, capsicum and green chillis.
When the onions turn translucent add chopped ginger garlic (or paste) and stir fry.
Add red chilli powder, haldi, dhaniya powder and salt. (remember you have added salt to the rice)
Mix well. Break the eggs, pour them into the pan and scramble lightly. Now add the cooked jeera rice to it.
Add chopped dhaniya leaves and lemon juice to it and mix well. Capsicum egg fried rice is ready...............Serve it hot............
