Stuffed Brinjal With Besan Masala/Gutti Vankaya Chanagapindi koora
250gms small bulb shaped brinjals
Half cup of besan (chenga pindi)
1 large onion
6 to 7 garlic pods
1 tea spoon whole dhaniya
1/2 tea spoon jeera
1/2 inch cinnamon stick
2 pieces of coconut or 2 table spoons of grated coconut
half lemon size tamarind ball (or you can use aam chur powder as per your taste)
1 tea spoon mirchi /chilli powder
1/4 tea spoon haldi
salt to taste
2 to 3 table spoons of oil
Grind chopped onions, whole dhaiya, coconut, ginger, garlic, tamarind, cloves, cinnamon stick and jeera to fine paste and keep it aside.
Heat a table spoon of oil in a pan. Add the finely ground masala to it and fry until the raw smell of the masala is gone. Now add mirchi, haldi and salt. Stir fry.
Now add besan to it. Fry for few more mins and take the mixture into a bowl.
You can taste the mixture and add salt if needed. Now the besan stuffing is ready.
Clean and cut vertical slits. Fill the besan stuffing in the slits as shown in the picture.
Now heat 2 table spoons of oil in the pan and slowly place the stuffed brinjals in the pan.
Close the lid and pour some water in it as shown above. Cook in a low flame. Stir carefully in between. Cook for 15 to 20 min. until the curry is done. Tasty Stuffed Brinjal With Besan Masala/Gutti Vankaya Chanagapindi koora is ready..........
