1 tea spoon each red chilli powder and dhaniya powder
1/4 tea spoon haldi
1 tea spoon lemon juice
3 to 4 table spoons of oil
1/2 tea spoon sugar (optional)
Coriander leaves finely chopped for garnish
Cut the top of the tomatoes. Remove the pulp with a spoon. Do not throw away the pulp. Grind the pulp and make puree. Grind an Onion to fine paste and keep it aside.
Heat 1 table spoon of oil in a pan, add cloves and cinnamon. Fry for few sec. and add 1 tea spoon of ginger galic paste. Stir and cook for a while and add the grounded onion paste. Fry until it changes color to pink. Then add 1/2 tea spoon red chilli powder, haldi and 1/2 tea spoon dhaniya powder. Mix well and add the grounded tomato pulp. Cook until it starts leaving oil. Add salt, sugar and a cup of water. Boil until the gravy thickens. Keep it aside.
Boil potatoes and green peas separately (if you are using frozen peas soak in warm water for few mns.) Mash the potatoes and add green peas, 1 tea spoon of ginger garlic paste, 1/2 tea spoon chilli powder, 1/2 tea spoon dhaniya powder, a pinch of haldi, salt to taste and a tea spoon of lemon juice. Mix well, the stuffing is ready now. Care fully stuff the mixture equally in the tomato shells.
Heat a pan and add 2 to 3 tea spoons of oil. Place the stuffed tomatoes, spread 2 more tea spoons of oil over the tomatoes.
Close the lid and cook in a low flame until the tomatoes are done.
Now take the tomatoes into a serving bowl and place them carefully. Pour the gravy over the cooked tomatoes and garnish with fresh dhaniya leaves. (You can also serve with out gravy.) Tasty Stuffed Tomato with Gravy curry is ready to serve...........
