250 gms palak (clean, wash, drain and chop finely)
2 to 3 tomatoes (finely chopped) (some do not prefer cooking palak with tomatoes, so it is optional)
2 onions (finely chopped)
2 tea spoons ginger garlic paste
2 green chillies
half tea spoon red chilli powder
1/4 tea spoon haldi
1 tea spoon dhaniya powder
salt to taste
1 tea spoon jeera
1 to 2 tbsp of oil
Boil 3 cups of water in a vessel. Add 1 tea spoon salt to it. Soak the soya chunks for 10 to 15 mins. Drain water. Squeeze the chunks, add some more water and drain it again. This helps to remove the raw smell of soya. Keep it aside.
Heat oil in a pan. Add jeera to it. When it starts spluttering add chopped onions. Fry until they turn translucent. Now add ginger garlic paste and green chilies. Stir fry. Add red chilli powder, haldi and dhaniya powder to it. Fry for few sec. and add chopped tomatoes. Add salt to taste and cook for few mins.
When the tomatoes are properly cooked add soya chunks to it.
Mix well and add the chopped Palak/spinach to it. Mix properly close the lid, reduce the flame and cook until the curry is done.
Switch off the flame and take the curry into a serving bowl and garnish with fresh coriander leaves. Tasty Palak Soya chunks curry is ready........Tastes good with rice or rotis..........
