Take a vessel, boil 3 cups of water. Add 1 tea spoon salt to it. Soak the soya chunks for 10 to 15 mins. Drain water. Squeeze the chunks, add some more water and drain it again. This helps to remove the raw smell of soya. Grind onion, ginger and garlic together to fine paste.
Heat oil in a pan. Fry the paneer pieces in a medium flame until they turn to golden color. Remove from the oil and keep aside.
Now in the same oil add cloves, cinnamon and cardamoms. Stir fry and add the onion-ginger-garlic paste. Fry in a medium flame until the paste is properly cooked. Now add chopped green chillies, red chilli powder, haldi, dhaniya powder, sugar and salt to it.
Stir fry and add tomato paste to it. Fry until the paste is properly cooked and oil starts separating. Now add the soya chunks and paneer pieces to it. Mix well.
Add a table spoon of curd to it (it is optional) Mix and add a cup of water. Reduce the flame and cook for 5 to 8 mins. Switch off the flame and take the curry into a serving bowl. Garnish with finely chopped fresh coriander leaves.
