Aloo Methi ki sabzi/Baby Potatoes-Methi curry/Aloo-Menthi koora curry​

Ingredients

• 2 bunches (150 gms) methi leaves
• 200 gms baby potatoes
• 1 tea spoon each rai and jeera
• 1/4 tea spoon hing
• 4 to 5 garlic pods chopped finely
• few curry leaves
• 2 to 3 green chillies
• 1 tea spoon red chilli powder
• 1 tea spoon dhaniya powder
• 1/4 tea spoon haldi
• salt to taste  
• 2 table spoons of oil

Method

Boil baby potatoes and peal them.  Clean, wash and chop methi leaves finely. Add methi leaves, salt and haldi 

Heat oil in a pan.  Add rai and jeera to it. When rai starts spluttering add onions, green chillies, chopped garlic and curry leaves.  Fry until the onions become translucent.  Add methi leaves, salt and haldi and mix well.
Now add boiled baby potatoes

Now add boiled baby potatoes, red chilli powder and dhaniya powder.  Fry for 2 to 3 mins.  Add half cup of water.  Close the lid and cook in a medium flame for 5 mins.  When the water is absorbed and curry becomes dry, switch off the flame and take the curry into a serving bowl.  Garnish with chopped coriander leaves.  Tastes good with Rotis or Chapatis.
