Baby Aloo Masala curry

Ingredients

• 250 gms Baby Potatoes  (boil in a pressure cooker for 2 to 3 whistles and peal them)
• 1 large onion (Make fine paste)
• 2 tomatoes (make fine paste)
• 2 tea spoons ginger garlic paste
• 2 cloves
• 1 inch cinnamon
• 1 tea spoon shahi jeera
• 1 tea spoon red chilli powder
• 1 tea spoon dhaniya powder
• 1/2 tea spoon sugar
• salt to taste
• 2 table spoons oil

Method

Heat oil in a pan.  Shallow fry the baby potatoes in the oil for 2 to 3 mins and keep them aside.  In the remaining oil add shahi jeera, cloves and cinnamon.  When jeera starts spluttering add ginger garlic paste.  Fry for a while and add onion paste.  Fry until the paste is cooked and changes to pink color.  

Now add red chilli powder, sugar, haldi and dhaniya powder. Mix well and add tomato paste.  When the tomato paste is cooked and starts leaving oil add boiled potatoes and salt.

Mix well and add a cup of water.  Reduce the flame, close the lid and cook until the gravy thickens.

When the curry is done, switch off the flame and take the curry into a serving bowl.  Garnish with chopped coriander leaves and serve with hot rotis or chapatis.......
