500 gms yellow cucumber(Peal, remove the seeds inside and chop to small pieces)
4 tomatoes (chopped )
1 large onion (chopped)
3 to 4 green chillies (chopped)
6 to 8 garlic pods mashed
few curry leaves
1 tea spoon each rai, jeera and urad dal
1 tea spoon red chilli powder
1/4 tea spoon haldi
1 tea spoon salt (as per taste)
2 table spoons of oil
Heat oil in a pan. Add rai, jeera and urad dal. Allow rai to splutter. Stir, when urad dal starts turning to golden color, add chopped onions, curry leaves, green chillies and mashed garlic pods. Fry in a medium flame until the onions turn pink.
Now add red chilli powder, haldi and salt to it. Mix well and add chopped tomatoes. Cook until the tomatoes become tender. Add chopped cucumber pieces. Add half cup water if necessary. Mix and close. the lid.
Cook in a medium flame for 10 to 15 mins. until the cucumber pieces are properly cooked. Switch off the flame. Take the curry into a bowl and garnish with chopped coriander leaves.
