a small lemon size tamarind soaked in warm water for 10 mins (extract the pulp)

Oil for shallow fry
Heat oil in a pan. Make long slits to the brinjals and shallow fry in the oil. Remove them and place them on a kitchen paper. Heat 1 table spoon of oil in a pan.
Add saunf, hing, cardamons, fenugreek seeds and cinnamon to it. Stir fry and add diced onions, green chillies and red chillis.
Fry until the onions become translucent. Now add grated ginger, red chilli powder, dhaniya powder and haldi. Stir fry and add the tamarind pulp. Add a cup of water if you need more gravy. Add salt to taste. A tea spoon of sugar adds more taste. This is optional.
Now add the shallow fried brinjals to it. Cook until the gravy thickens. Now take the curry into a serving bowl and garnish with chopped coriander leaves. Yummy Khatte Baigan curry is ready to serve......Tastes good with Rice, Rotis or chappatis.........Try this...
