Attu Pulusu (Besan ke Cheele ki Sabji)​​

Ingredients

  • 1/2 cup basen (Chenaga pindi)
  • 2 onions finely chopped
  • 2 tomatoes finely chopped
  • 2 tea spoons ginger garlic paste
  • 2 to 3 green chillies chopped
  • few curry leaves
  • 2 to 3 red chillies
  • 1/2 cup tamarind pulp
  • (soak2 lemons size tamarind balls in warm water and extract pulp)
  • 2 tea spoon red chilli powder
  • 1 tea spoon dhaniya powder
  • 2 tea spoons methi jeera powder
  • (1 tspn jeera and 1 tspn methi roasted dry and grounded)
  • 1/2 tea spoon haldi
  • 1 tea spoon each rai, jeera and urad dal
  • 2 tea spoons salt (as per taste)
  • 2 table spoons sugar or grated jaggery
  • a pinch of soda bicarb
  • 3 table spoons of oil

Method

Mix half cup besan, 1/2 tea spoon red chilli powder, salt to taste, a pinch of soda bicarb in a bowl.  Heat 2 to 3 tea spoons of oil in a pan.  

Fry onions and 1 tea spoon chopped green chillies until onions turn pink and add them to the besan mixture.  Make a smooth batter adding sufficient water. (the consistency should be like dosa batter)

Heat a dosa pan and spread the batter evenly and make a thick dosa.  Spread 2 to 3 tea spoons of oil around it and close the lid.  Cook in a low flame for 2 to 3 mins. and turn over and cook for few mins in the same manner.  Now Chenaga pindi Attu (Besan ka cheela) is ready.....  Take it into a plate and cut to equal pieces.

Take a sauce pan heat 2 table spoons of oil, add rai, jeera and urad dal.  When rai starts spluttering add finely chopped onions and green chillies.  

Fry until they turn pink add ginger garlic paste.  Stir and add red chilli powder, haldi, dhaniya powder and curry leaves.  

Fry for few seconds and add finely chopped tomatoes.  Add salt and cook until the tomatoes are done.  Now add tamarind pulp, jaggery, salt, 3 cups of water and methi jeera powder and boil for 5 to 8 mins until the gravy thickens.  Pulusu is ready.....

​Take it into a bowl.

Now add the cut pieces of the Attu (Besan ka cheela)  to the Pulusu.  Leave it for 10 to 15 mins.  Tasty Sweet, Sour and Hot Attu Pulusu is ready......

Serve with steamed rice, rotis or chapatis.
