2 tspn cashews, 2 tspn khas khas and 1 tspn jeera (ground to fine paste)

Method
Peel and grate bottle gourd. (around 2 cups of grated bottle gourd ) Squeeze and drain the excess water. In a bowl take the grated loki and add 1 tspn ginger garlic paste, 1 tspn salt, 1 tspn chilli powder, a pinch of haldi, a pinch of soda bicarb and mix well. Add sufficient basen and make a thick paste. No need to add water. Add finely chopped coriander leaves and make small balls or as shown in the pic.
Heat sufficient Oil in a pan and deep fry the koftas until golden color. Drain on a kitchen paper and keep them aside.
Heat 2 table spoons of oil in a pan. Add cloves, Cinnamon and cardamoms. When cloves starts spluttering add 2 tspn of ginger garlic paste and chopped green chillies. Stir for a while and add the grounded Onion paste. Fry in a medium flame until the paste turns pink. Now add chilli powder, haldi, dhaniya powder and salt (asper taste). Mix well and add the tomato paste.
Cook until the paste starts leaving oil. Now add cashew paste, stir and cook for few mins. Add 1/2 tspn of sugar. Now add 2 to 3 cups of water. Increase the flame and let it boil for 3 to 4 mins. Now add the koftas and boil for few more mins and switch off the flame.
Loki Kofta curry (sorakaya pakodi koora) is ready.......
Take it into a serving bowl and garnish with fresh coriander leaves.
Serve hot with Rotis or chapatis...........Enjoy..........
