Spring Onion Chicken curry/Ulli paraka Chicken koora
Ingredients
300 gms chicken
2 bunches (200 gms Spring onion) (clean, wash, drain and chop)
1 large onion (chopped)
1 Large tomato (chopped)
2 tea spoons ginger garlic paste
1 cup fresh coriander leaves paste (2 bunches of coriander leaves ground to paste)
1 tea spoons red chilli powder
1/2/2/ tea spoon haldi
2 cloves, 1/2 inch cinnamon and a bay leaf
3 to 4 table spoons of cooking oil
Salt to taste
For Marination:
1 lemon (juice)
1 tea spoon red chilli powder
1/2 tea spoon haldi
1 tea spoon salt
2 tea spoon ginger garlic paste
For Garam masala powder:
1 inch Dalchini (Cinnamon) stick
4 cloves
2 cardamoms
1 tea spoon shahi jeera
2 tea spoons whole dhaniya
(Fry all theses ingredients dry without oil and grind to fine powder)
Method
Clean chicken and wash. Drain and take it into a bowl. Add lemon juice, 2 tspn ginger garlic paste, 1 tspn red chilli powder, 1/2 tspn haldi, salt and mix well. Leave it for marination for around 1/2 an hour.
Cook the marinated chicken in a pressure cooker for 2 to 3 whistles and keep it aside.
Heat oil in a pan. Add cloves, cinnamon and bay leaf. Fry for a while and add chopped spring onions and Onions. Fry until the onions become translucent. Now add 2 tspn ginger garlic paste and fry for few sec. Now add chopped tomatoes,1 tspn red chilli powder, 1/2 tspn haldi and salt to taste.
When the tomatoes are cooked add fresh coriander leaves paste. Cook until the oil starts leaving.
Now add the cooked chicken pieces. Mix well and cook for 8 to 10 mins in a medium flame until the chicken curry is done. Sprinkle the garam masala powder, mix well and take it into a serving bowl.
