Dahi Baingan

Ingredients

• 250 gms brinjals (long)
• 1 cup diced onions
• 2 to 3 green chillies
• half inch ginger grated
• 1 tsp saunf
• half inch cinnamon
• 2 green cardamoms
• a pinch of hing
• 1/2 tsp red chilli powder
• 1 tsp dhaniya powder
• 2 cups of Curd
• salt to taste
• 1 tsp sugar
• Oil for shallow fry

Method

Heat oil in a pan.  Make long slits to the brinjals and shallow fry in the oil.  Remove them and place them on a kitchen paper.  Heat 1 table spoon of oil in a pan.  Add saunf, hing, cardamons and cinnamon to it.  Stir fry and add diced onions and green chillies.  Fry until the onions become translucent.  Now add  grated ginger red chilli powder, dhaniya powder and haldi.  Stir fry and add little water.  Take the curd into a bowl and beat well.  Now add the beaten curds slowly.  Add a cup of water.  Add salt to taste.  A  tea spoon of sugar adds more taste.  This is optional.  

Now add the shallow fried brinjals to it.  Cook until the gravy thickens.  Now take the curry into a serving bowl and garnish with chopped coriander leaves.  Tasty  Dahi Baingan curry is ready to serve......Tastes good with Rice, Rotis or chappatis.........
