Baigan Tamater ki sabji(Vankaya tamata koora)​​

Ingredients

• 250 gms brinjals
• 3 tomatoes
• 2 green chillies
• 2 onions
• 8 to 10 curry leaves
• 1 tea spoon each rai , jeera and urad dal
• 1 tea spoon chilli powder (as per taste)
• 1 tea spoon salt (as per taste)
• 1/2 tea spoon haldi
• 1 tea spoon dhaniya powder
• 6 to 7 garlic pods mashed
• 1 and 1/2  table spoon oil

Method

Wash and chop brinjals and soak in water.  
 Add a tea spoon of salt to it. This prevents  brinjal getting 
discolored.

Heat oil in a pan.  Add rai, jeera and urad dal.  When rai starts spluttering add finely chopped onions, mashed garlic, green chillies and curry leaves.  Fry until the onions turn pink.  Now add chilli powder, haldi, dhaniya powder and stir.  Add chopped brinjals and tomatoes.  Add salt and mix well.

Close the pan with a lid, pour water on the lid and simmer the flame.  (you can see in the pic below)

Cook for around 10 to 15 mins in a low flame.  Stir in between. After the curry is done switch off the flame, take it into a serving bowl and garnish with fresh coriander leaves.  

Simple Baigan Tamater ki Sabji (Vankaya tamata koora) is ready.....Tastes good with rotis, chapatis and rice too...........
