Clean, wash and drain sorrel leaves. Take a pressure cooker. Chop sorrel leaves and put them in the pressure cooker. To it add chopped brinjals, onions and green chillies. Add haldi and salt to taste. To it add a cup of water and pressure cook for 2 whistles. Keep it aside and allow it to cool.
Heat a table spoon of oil in a pan. Add rai, jeera and urad dal. When rai starts spluttering add mashed garlic and curry leaves. Fry and add the thadka to the boiled curry. MIx well and cook for few mins and switch off the flame. Gongura-Vankaya koora/Sorrel Leaves-Brinjal curry is ready ............Take it into a serving bowl and garnish with curry leaves. Tastes good with steamed rice.
